Fish should be cooked on a hotplate to keep all its healthy nutrients. Use Olivo (garlic or lime flavor) to spray onto the cold cooking surface of your hotplate and then over the fish, and spraying directly on the fish every time that you turn it over will maximize its flavor and keep all its nutrients. Remember that Olivo should never be used near open flame.
Using Olivo will also reduce the smell of frying which is common when using normal oil.
